I am sitting here laboring over this week’s menu…and thought I would mix it up a bit and post my menu to my blog in hopes that some of my family/friends will return the favor – so I can gather more ideas.
Monday: Chicken Fajitas, Black Beans, and Fresh Pineapple
Tuesday: Pulled Pork Sandwiches, Baked Beans, Corn on the Cob, Watermelon
Wednesday: Taco Salad, Berries
Thursday: Portobello Lasagna Roll ups, Light Caesar Salad
Friday: Honey Chicken/Veggie Kabobs, Rice Pilaf, Melon
Saturday: Out
Sunday: Strawberry Chicken Salad, Homemade Wheat Rolls
So tell me...what's for dinner at your house?
you have way fancier stuff then we do. we eat mac and cheese, taquitos (from the freezer), etc. sometimes i get fancy and make cream cheese chicken. delicious. we had hawaiian haystacks with friends the other day. yummy as well.

Our menu is simple this week. I didn't know how long it would take to get rid of the fruit fly disaster, so i planned meals that require as little time working with food in the kitchen as possible!
ReplyDeleteS- Tyson beef tips (yep, the kind you nuke), potato pearls, steamed zucchini & yellow squash, peaches. fancy, right?
M- football food! mini chili bowls (bake illsbury bisquits on inverted muffin tin to make "bowls") top w/ cheese, sour cream, etc., lil' smokies, watermelon
T-(this is breakfast for dinner night because it's easy cleanup and I go to YW) Blueberry Pancakes w/ blueberry syrup, OJ, scrambled eggs, berry parfaits
W-beans beans..this is part of our family's "something new" goals...beans once a month. We've had fun trying new recipes and have loved all but one recipe so far (that only Aaron ate because he loves me, i was pregnant and emotionally fragile, and he was incredibly hungry). This time it's slow cooked pinto beans, ham, and polska kielbaska with homemade cornbread.
T-jocelyn's grilled pork tenderloin and yummy sauce, sweet potatoes, zucchini(makes it to the table 3/4 of our meals because we have tons and my kids love it), rolls.
F-fajitas (chicken, peppers, onions, squash) beans, spanish rice, too much guac
S-out
nothing fabulous, but I too love hearing what other people are preparing to get ideas.
Well, since Neil is out of town this week, we are having (now don't get too jealous):

(Sun.) I'll make a real meal: Bowtie pasta w/chicken, in a roasted garlic & red bell pepper sauce, french bread, & squash. SO YUMMY! Oh, and gingerbread cake w/ cream cheese frosting for dessert. :)

Yep. Just take the crust, spread on some refried beans, add cheese, olives, hamburger, onions, etc. Bake it. When it comes out add salsa, sour cream, lettuce, tomatoes, etc. Cut like a pizza and yummm. My kids all like it. :)

Mon- Leftover Stouffer’s Lasagna from Sunday and one of those complete salads in a bag (Caesar).
Tues- Two last minute $5 Pizzas from Little Caesars picked up on the way home from Soccer Practice. We also got the crazy bread because we needed more "Crazy" around here.
Wed- Ramen Noodles. (Before you pass judgment, know that they were the "creamy" variety~ have you had these?).
Thur- A family sized can of Hormel Chili and several Reese's Peanut Butter cups for dessert.
Fri- Taco Bell (man that .79 .89and .99 menu rocks! It feels like they almost pay us to eat there!)
Sat- Chili's (likely the most balanced meal of the week. I think I counted 4 colors on my plate!)
Sunday- Hopefully Hamburgers on the grill in the backyard if it will ever stop raining here in Atlanta! If not we might throw some corn dogs and fries from the freezer in the oven and turn it up to 450 so they come out nice and crispy and then mix some Mayo and Catsup together for something to dunk them in!
Now tell the truth and come clean, what is really on everyone's menus!!!

Your menu sounds lovely! I only cook "proper" meals about 3 of the 5 weekdays. Let's see, lately it's been lots of seasonal stuff like...

Panini sandwiches with pesto (I don't have a panini grill - just two cast iron pans)
Thai coconut curry with rice
A big salad with some sliced grilled steak.
Couscous salad, greek style (feta, tomatoes, oregano, olives)
Crispy lemon/herb chicken
Pork loin with grilled vegetables (zucchini, potatoes, etc.)
When the weather cools down I'll start making more comfort foods. Mmmmm.
